For My Husband.

This is a little late. Cory's birthday was a week ago. But I still want to write about what we did. If you don't like the mushy gushy stuff, stop reading now. 

There were a few things that seemed to take away the fun of his birthday this year. 

-School. He had to study a ton.
-I was sick. Nauseous, headache, no energy, puking...the whole thing.
-He had to work.
-Because we announced my pregnancy that weekend, the baby got more attention than him. Which no one is complaining about. But it still happened nonetheless.

That being said, I don't want him to think his birthday was any less important this year. We didn't get to celebrate like we usually do. But we still got to do a few things.

-We went to his favorite restaurant, Outback.
-We watched a movie together.
-We made red velvet cake.
-Once I was feeling better I got him a new outfit. :)

Even though we didn't make his birthday as big of a deal as I wanted to, I have no doubt he will always remember his birthday this year. He will always have the birthday/pregnancy announcement video to watch. He will always remember what a special time it was for both of us.

Cory, 
I love you more than words can describe. You are so good to me. You cook me food, take care of me when I'm not feeling well, you tell me I can make it through at least sacrament meeting (even though sometimes I don't think I can), you put my things away, you do my laundry... I could go on and on. What more could I ask in a husband? You mean everything to me and I'm so grateful for this time in our lives. I can't wait for us to become parents. You're going to be such an amazing daddy!

An Amazing Experience

On Friday, Cory and I had the most miraculous experience. We got to listen to our baby's heartbeat! Yes, I'm pregnant!!

It was so amazing! At first our midwife couldn't find it. She about gave up. I think she realized I was on the verge of bursting out in tears when she told me it was too early. So, she tried for a few more minutes and finally found it.

We were relieved. There really is a tiny little baby in there! Baby Simons is due in December!!! And we cannot wait!

two years.

Monday was our two year anniversary. I know that is not very long. But I honestly cannot believe we have been married for two years already! The time has flown by. We had a great anniversary. Cory didn't have to study too much. We had time to watch a movie together and get some take-out. It was nice to just sit at home and enjoy each others company. Earlier that day I walked to Wal-Mart so I could surprise Cory with something. He always has the car these days so it's hard for me to sneak away. I think celebrations are always more fun when there are surprises involved. He loved it and was impressed I walked there. Even though it is only a 5 minute walk.

But Cory got me the perfect gift. A wedding band for my ring. It was a big surprise! I'm officially married now. I love it! I feel just like I did after we were engaged. I always want to wear them and look at them! They are so pretty together. He did a great job! I love him so much. I'm happy we get to spend eternity together. We have been having a great life and I love every second of it.




On a side note, I love Ben & Jerry's. Many people know this about me. My favorite flavor is Chocolate Therapy. Today at the grocery store I happened to look at the flavors of B&J they had, which I don't usually do because the store never carries any good flavors. But I saw something that caught my eye.

It looked yummy. And it tasted DELICIOUS! My chocolate therapy has a new rival. I encourage all to devour some for themselves.

April Craft

I was going to post this with my May craft but I haven't got around to finishing it yet.
But I really love this wreath I made for Easter.
I found it HERE.
Cory helped me quite a bit with this one. I had a hard time wrapping those eggs at first. And of course, Cory was better at it than me. No surprise there. Once I got the hang of it, I took over. 
This project took me FOREVER though! Good thing I had a lot of free time on my hands or I would not have finished it.


At first I wasn't so sure I liked how it turned out. But now I love it! It's about time to take it down, which makes me sad. I can't wait to put it up next year!

I love Iowa but...

I miss a few things in Utah.

Do you know what I want right now more than anything? Mexican food. Specifically Costa Vida. I want a grilled chicken burrito with pinto beans and medium sauce. Smothered please.

My second pick would definitely be Rubio's.
I would take almost anything from here. Which is very uncommon for me.

Los 3 Amigos. Trashy. Sooooo good. I'll take a #3 please.

Besides Mexican food I really miss Wingers. I know, I know, it's unbelievable there is not a Wingers close by.

I do love their sticky fingers. But my favorite thing on the menu? Sticky finger quesadilla. Yum!

And of course I miss,


All of which are not located in the Quad Cities. Bummer. There is nothing to eat out here. There is an Applebee's on about every corner. There is a Chili's. Which is ok. Not fabulous though. An Olive Garden. A T.G.I.F. And....... That's about it. No good Mexican places we found. The Mexican restaurants out here serve ground beef with taco seasoning. That is not Mexican. Not to mention repulsing. So I have been trying to think of ways to satisfy my cravings. I have found a few recipes I'm going to try. Hopefully they will be impressive.

As of Saturday, March 26 my big brother is officially engaged! I couldn't be any happier for him. It seems like it was just yesterday that we were throwing


 these at cars. 

Or that we were running to the kitchen Saturday mornings to watch

Or how I would for some reason let him practice

And I could have sworn it was just the other day that he dropped me off at the mall

I remember picking him up at the airport
from his 2 year service for the Lord.
